The reason that this dish is only made in Hoi An is because the noodles have to be made from water from one of the ancient Cham wells around the district. The noodles are quite fat, a bit like Japanese Udon noodles and make for a hearty meal.
Cao lau is a local noodle of Hoi An.
This vegetarian Cao Lau includes Tofu, mushroom, gluten free soya sauce.
Note: To guarantee your safety, we use rice flat noodles ( 100% gluten free) instead of the normal noodles used for Cao Lau, because we can not control what they put in the pre made noodles ( some will put wheat to enhance the flavor).

Ingredients
For the Noodles
- Cao Lầu noodles: 8 oz (or substitute with thick rice noodles)
- Water: For boiling the noodles
For the Tofu
- Tofu: 1 block (about 14 oz), firm, pressed, and sliced into strips
- Soy sauce ( Gluten free): 2 tbsp
- Sesame oil: 1 tbsp
- Garlic: 2 cloves, minced
- Ground black pepper: To taste
For the Broth
- Vegetable broth: 4 cups
- Mushrooms: 1 cup, sliced (shiitake or button mushrooms)
- Soy sauce gluten free from coconut: 1-2 tbsp
- Salt: To taste
- Sugar: 1 tsp (optional)
- Lime juice: 1-2 tbsp (for seasoning)
For Toppings
- Fresh herbs:
- Thai basil: A handful
- Cilantro: A handful, chopped
- Bean sprouts: 1 cup
- Chili peppers: Fresh, sliced (optional)
- Fried shallots: For garnish (optional)
