Ingredients
For the Filling
- Mung beans: 1 cup, soaked for 2-3 hours (or overnight)
- Tofu: 1 block (about 14 oz), firm, pressed, and crumbled (optional)
- Carrots: 1 medium, grated or finely chopped
- Cabbage: 1 cup, finely chopped (napa cabbage or green cabbage works well)
- Mushrooms: 1 cup, finely chopped (shiitake or button mushrooms)
- Green onions: 2-3, chopped
- Garlic: 2 cloves, minced
- Soy sauce gluten free from coconut sauce: 2 tbsp
- Salt: To taste
- Ground black pepper: To taste
For the Spring Rolls
- Spring roll wrappers: 1 package (rice paper or wheat-based, depending on preference)
- Vegetable oil: For frying ( new oil and separate oil)
For the Dipping Sauce
- Soy sauce gluten free from coconut: 2-3 tbsp
- Rice vinegar: 1-2 tbsp
- Chili sauce: (optional) For heat
- Sugar: 1 tsp (to taste)
