Ingredients

• 3 cups cooked rice (preferably day-old rice for the best texture)
• 1/2 lb (225 g) shrimp, peeled and deveined
• 1/2 lb (225 g) squid, cleaned and sliced into rings
• 1/2 lb (225 g) scallops (optional)
• 3 tbsp vegetable oil, divided
• 3-4 cloves garlic, minced
• 1 small onion, diced
• 1/2 cup frozen peas and carrots (or any mix of vegetables you prefer)
• 2 eggs, lightly beaten
• 2-3 tbsp gluten free soy sauce gluten free from coconut (adjust to taste)
• 1 tbsp oyster sauce ( homemade gluten free) (optional, for extra depth of flavor)
• 1/2 tsp sesame oil (optional, for added fragrance)
• Salt and black pepper, to taste
• Green onions, chopped, for garnish
